INGREDIENTS:
1 pound lean ground beef
1 medium onion, diced
1 bell pepper (any color)
1 Tbs minced garlic
2 Tbs plus 1 tsp Taco Seasoning
16 ounce can of kidney beans, drained
1 cup corn (frozen or canned)
1 and 1/2 cups diced tomatoes
2 cans beef broth
DIRECTIONS:
Brown beef with onions, peppers, and garlic. Add in taco seasoning. Add beans, corn, tomatoes and broth. Bring to boil, simmer on low for 15 minutes.
Serve with toppings of choice: tortilla strips, sour cream, cheese, avocado, etc.
